Whole cumin is an essential ingredient for any spice rack. It has a warm, earthy flavour with a bitter finish. It’s particularly popular in Indian and Middle Eastern cooking. 

The small brown seeds can be used whole or crushed to a fine powder. If you’re using them whole, dry fry them in a hot pan to release their flavour and aroma.

In Indian cooking, cumin seeds are added to curries and spice blends like garam masala. Sizzle the seeds in ghee with other spices to temper tarka dahl. Cumin is great friends with coriander, ginger and mustard seeds.

You will find this earthy spice in recipes from around the world. Use it to flavour falafel, chilli con carne and grilled meat. In China, cumin takes a starring role in smoky skewers from the Xinjiang region. Recreate them at home with this recipe for cumin lamb skewers.
