Cherry Rocher’s raspberries in liqueur will add a burst of fruity flavour to cakes, tarts and cocktails. The ruby red berries are steeped in eau de vie (a colourless fruit brandy) that gives them a mellow boozy flavour. 

Serve these liqueur-soaked berries with a creamy panna cotta or scoops of vanilla ice cream. You can add them to whipped cream to top a pavlova, layer a sponge cake or fill a Swiss roll. They’re ideal for cocktails, especially frozen daiquiris and berry Mojitos. Add them to a glass of chilled Champagne to make the elegant pre-dinner tipple, ‘Framboise Royale’.

You can also use the raspberries in savoury recipes, such as salad dressings, glazes or a fruity sauce to serve with roast pork. Their tangy, sweetness is a good match for the rich, complex flavour of balsamic vinegar.
